53 बरस की अज़ेमिना अहमदबेगोविच को सर्दियां बहुत पसंद हैं। ऐसा नहीं है कि वो बर्फ़बारी या ठंड की शौक़ीन हैं। उनके सर्दी के मौसम को पसंद करने की वजह है, उनकी बचपन की मज़ेदार यादें।
अज़ेमिना, पूर्वी यूरोपीय देश बोस्निया की रहने वाली हैं। अज़ेमिना विसोको शहर में पली-बढ़ीं। बचपन में जब ठंड के दिन होते थे, तो बहुत सारे सामाजिक कार्यक्रम हुआ करते थे। कुछ ख़ास मौक़े ऐसे भी होते थे, जब दोस्त-रिश्तेदार और परिवार के लोग मिलकर सेटेनिजा नाम की डिश बनाया करते थे।
ये बोस्निया की पारंपरिक स्वीट डिश है। सेटेनिजा को चीनी, आटा और नींबू मिलाकर बनाते हैं। अब इसे बनाने की सामग्री तो बहुत मामूली चीज़ें हैं। और ज़्यादा सामान की ज़रूरत भी नहीं होती। असल चुनौती है सेटेनिजा को बनाना।
इसे बनाने के लिए कई लोगों की ज़रूरत पड़ती है। कई हाथ मिलकर चीनी मिलाकर गुंथे हुए आटे को घुमाते हैं, ताकि वो ऊन जैसा हो जाए। यानी सेटेनिजा बोस्निया का ऐसा डेज़र्ट है, जिसे बेहतर टीमवर्क से ही बनाया जा सकता है। एक भी ग़लत मोड़ आया नहीं कि डिश का सत्यानाश हो जाना है।
सिजेलो
सेटेनिजा को अक्सर बोस्निया की बैठकी या पार्टी में बनाया जाता है। इन बैठकों को बोस्निया में सिजेलो कहते हैं। इसमें दोस्त-यार, रिश्तेदार और परिवार के लोग मिलकर गप-शप भी करते हैं, गाते-बजाते भी हैं और सेटेनिजा को भी तैयार करते हैं।
सिजेलो ऐसा सामाजिक आयोजन है, जो बोस्निया के पारंपरिक समाज का अटूट अंग है। इस दौरान लोग लोकगीत गाते हैं और नाचते हैं। वहीं, इस दौरान सेटेनिजा बना रही टीम का हौसला भी बढ़ाया जाता है। कई बार तो उनका ध्यान बंटाने के लिए तंग भी किया जाता है।
कुल मिलाकर ये मीठा व्यंजन बनाने का काम एक बड़े सामाजिक आयोजन का हिस्सा है। अज़ेमिना के परिवार में भी बरसों तक ये सिलसिला चलता रहा था। उनके मां-बाप सिजेलो में दोस्तों, परिजनों को बुलाया करते थे। बचपन की इन्हीं हसीन यादों की वजह से अज़ेमिना को सर्दियां बहुत पसंद हैं।
अज़ेमिना ने क्यों तय किया सेटेनिजा बनाना?
अब अज़ेमिना ग्रेकैनिका नाम के शहर में रहती हैं। ये बोस्निया के पूर्वोत्तर इलाक़े में है। वहां, अज़ेमिना ने अपना परिवार बसाया है। नया दौर आने के साथ बचपन की वो बैठकें गुम हो गई हैं। लोगों के आपसी संवाद की जगह अब टीवी, मोबाइल और इंटरनेट ने ले ली है।
हालांकि, अभी भी कुछ लोग सिजेलो या बैठकी वाली पार्टियां आयोजित करते हैं। अज़ेमिना की बहन विसोको में ही रहती हैं। वो अज़ेमिना के घर से दूर है। नए शहर ग्रैकैनिका में अज़ेमिना के जो दोस्त बने हैं, उन्हें सेटेनिजा के बारे में पता ही नहीं है। क्योंकि बोस्निया के इस हिस्से में ये परंपरा नहीं है कि सिजेलो पार्टियां हों और सेटेनिजा डिश बने। इसी वजह से अब अज़ेमिना ने तय किया है कि वो अपने नए दोस्तों को सेटेनिजा बनाना सिखाएंगी।
कैसे बनाते हैं सेटेजिना?
अज़ेमिना बताती हैं कि पहले आटे को भूरा होने तक भूना जाता है। फिर उस मे चीनी और नींबू का रस गर्म किया जाता है। जब चीनी भूरी होने लगती है, तो उसे भुने हुए आटे में डाला जाता है।
फिर उसे गोल-गोल घुमाया जाता है, जिससे वो रस्सी की तरह हो जाए और उसमें धारियां पड़ जाएं। बनाने वाले सेटेनिजा को हाथ में तेल लगाने के बाद बनाना शुरू करते हैं, ताकि वो चिपके नहीं। चीनी और नींबू के रस से तैयार रस्सी जैसी इस चीज़ को इतना घुमाया जाता है कि इस में बल पड़ने लगते हैं।
आम तौर पर इसे घुमाने का काम तीन से छह लोग मिलकर करते हैं। बाज़ मौक़ों को छोड़कर, ये काम महिलाएं ही करती हैं, जो एक नीची और गोल मेज के इर्द-गिर्द बैठकर इसे बनाती हैं। जहां पर सेटेनिजा को बनाया जाता है, वो कमरा ठंडा होना चाहिए। वरना, इस पेस्ट के टूटने का ख़तरा रहता है।
सेटेनिजा बनाने का काम घंटों तक चलता रहता है। जब एक टोली थक जाती है, तो दूसरे लोग आकर उनकी जगह ले लेते हैं। इस दौरान बाक़ी के मेहमान बोस्निया की कॉफ़ी पीते रहते हैं और लोकगीत गाते रहते हैं। जब सेटेनिजा का वो घुमावदार गोला ठंडा हो जाता है, तो उसे काट कर लोगों को परोसा जाता है।
परंपरा को ज़िंदा रखने की ख़ुशी
अज़ेमिना ने जब से ये पार्टियां आयोजित करनी शुरू की हैं, तब से सेटेनिजा बहुत लोकप्रिय हो गया है। वो अब सार्वजनिक कार्यक्रम आयोजित कर के सेटेनिजा बनाना सिखाने लगी हैं। अज़ेमिना कहती हैं कि वो सेटेनिजा को घरों से निकाल कर सड़कों पर ले आई हैं।
उन्हें इस परंपरा को ज़िंदा रखने पर बहुत ख़ुशी होती है। अज़ेमिना अब महिलाओं की एसोसिएशन की मदद से इसका प्रचार करने में जुट गई हैं। कई और संगठन भी इस काम में जुट गए हैं, ताकि बोस्निया की इस मीठी डिश को दुनिया भर में मशहूर कर सकें।

इस दौरान लोक कलाकार, बोस्निया की पारंपरिक वेष-भूषा में नाचते-गाते रहते हैं, ताकि लोगों का दिल लगा रहे। बोस्निया का सांस्कृतिक संगठन 4टी भी सेटेनिजा और सिजेलो की परंपरा में नई जान फूंकने में जुटा है। इसके अध्यक्ष मुस्तफ़ा मुस्ताजबेगोविक ने ख़ुद ही सेटेनिजा को बनाना सीखा है।
सेटेनिजा बनाने की प्रतियोगिता
उन्होंने बचपन में भी सिजेलो पार्टियों में शिरकत की थी। अब वो नई पीढ़ी को ये हुनर सिखा रहे हैं। इसके लिए वो प्रतियोगिताएं भी आयोजित करते हैं। अब तक उनका संगठन ऐसे 15 मुक़ाबले आयोजित कर चुका है। इनमे से तीन तो बोस्निया की राजधानी सराजेवो में हुई थीं।
सेटेनिजा बनाने की प्रतियोगिता में वो जीतता है, जिसका चीनी का पेस्ट सबसे पतला हो जाता है। वैसे ये काम जीतने से ज़्यादा आपस में मेल-जोल करने और टीम के तौर पर काम करने का है। मुस्तफ़ा कहते हैं कि उनकी प्रतियोगिताओं में एक हिस्सा 10-12 लोगों के मिलकर सेटेनिजा बनाने का भी होता है।
मुस्तफ़ा कहते हैं कि यूं तो चीनी के पेस्ट को लोग अकेले-अकेले भी घुमा सकते हैं। पर, क्या इंसान अकेला रहने के लिए दुनिया में आया है?
सोशल नेटवर्किंग की मिसाल
बोस्निया के पारंपरिक खान-पान पर लेखिका अलीजा लकिसिक ने एक किताब लखी है। उन्होंने अपनी किताब में सेटेनिजा को सामाजिक आयोजनों का व्यंजन बताया है। उन्होंने लिखा है कि सेटेनिजा असल में एक तार की तरह है, जो लोगों के बीच रिश्ता क़ायम करता है।
बोस्निया के पत्रकार पाव्ले पाव्लोविक ने तो ये लिखा है कि सेटेनिजा असल में सोशल नेटवर्किंग की पहली मिसाल है, जो फ़ेसबुक से काफ़ी पहले लोगों को जोड़ने का काम करता था। बोस्निया के सांस्कृतिक संगठन की अध्यक्ष आमना सोफिक कहती हैं कि सेटेनिजा लोगों को एक-दूसरे से जोड़ता है।
उनका संगठन भी बोस्निया के अलग-अलग शहरों में लोगों को इकट्ठा कर के सेटेनिजा बनाना सिखाता है। इस दौरान बहुत से नई दोस्तियां होती हैं। नए रिश्ते जुड़ते हैं। लोगों में प्यार हो जाता है।
पहले के दौर में सेटेनिजा बनाने के दौरान युवक-युवतियां एक-दूसरे से छेड़खानी किया करते थे। मर्द कई बार चीनी के बर्तन में नमक डाल देते थे, ताकि अपनी पसंद की लड़की का ध्यान खींच सकें। जिन जोड़ों में प्यार हो जाता था, वो मिलकर चीनी के बर्तन की रखवाली करते थे, ताकि अकेले में प्यार की बातें कर सकें।
सांस्कृतिक विरासत का प्रचार नहीं करता बोस्निया
सेटेनिजा से जुड़े बोस्निया के एक पारंपरिक लोकगीत का मतलब कुछ इस तरह है, 'तुम्हें ख़ूबसूरत लड़कियों ने बनाया है, ताकि वो लड़कों को अपनी तरफ़ लुभा सकें। और मुए लड़कों ने तो चीनी में नमक डाल दिया।'
सेटेनिजा बोस्निया में बहुत पसंद किया जाता है। लेकिन, बाक़ी दुनिया ने इसका नाम तक नहीं सुना। वजह ये कि बोस्निया की सरकार, अपने पारंपरिक खान-पान का प्रचार करने में नाकाम रही है।
बोस्निया की सरकार अपनी सांस्कृतिक विरासत का प्रचार नहीं करती, ये बात 2018 में आई अल जज़ीरा की रिपोर्ट में भी सामने आई थी। यही वजह है कि यूनेस्को से इसे विश्व धरोहर का दर्ज़ा नहीं मिल सका है। अब कई सांस्कृतिक संगठन बोस्निया की सरकार से गुज़ारिश कर रहे हैं कि वो सेटेनिजा का प्रचार कर के इसे विश्व विरासत का हिस्सा बनवाए।
जानकार कहते हैं कि इसके लिए सेटेनिजा के बारे में जागरूकता फैलानी होगी और ढेर सारी जानकारी जुटानी होगी। तभी बोस्निया का पारंपरिक खान-पान दुनिया के नक़्शे पर आ सके हैं।
बोस्निया के प्रोफ़ेसर इनीस कुजुन्डज़िक कहते हैं कि, "पुस्तकालयों, म्यूज़ियम और ऐसे ही दूसरे सांस्कृतिक संगठनों को इस काम में बड़ा रोल निभाना होगा। अफ़सोस की बात ये है कि बोस्निया में ऐसे संगठन हैं ही नहीं।"
फिर बोस्निया की सरकार को भी अपनी परंपरा के प्रचार में दिलचस्पी नहीं है। अच्छी बात ये है कि बोस्निया के अज़ेमिना जैसे लोग ख़ुद ही अपने बचपन की तमाम यादों को इस तरह से सहेज रहे हैं। यही लोग बोस्निया की परंपरा और ख़ास सांस्कृतिक पहचान बनाए रखने में जुटे हैं। सेटेनिजा लोगों को आपस में जोड़वे का काम बख़ूबी कर रहा है।
