સ્વાદિષ્ટ તલના લાડુ

સામગ્રી : 250 ગ્રામ સફેદ તલ 200 ગ્રામ ગોળ 100 ગ્રામ સેકેલા સીંગદાણાનો ચુરો. અડધી ચમચી ઈલાયચી પાવડર

બનાવવાની રીત : એક કઢાઈમાં તલ નાખી ગુલાબી થતા સુધી શેકો. શેકેલા તલ અને સીંગદાણાના ચુરામાં ઈલાયચી પાવડર મિક્સ કરો. એક કઢાઈમાં 1 ચમચી પાણી અને ગોળ નાખી પીગળે ત્યાં સુધી શેકો. આંચ ધીમી કરી ગોળમાં તલ નાખી તેને મિક્સ કરો. ગેસ પરથી તેને ઉતારી લાડુ બનાવી લો.

ડ્રાયફ્રુટસના તલ માવા-રોલ

સામગ્રી

2 કપ તલ, એક કપ માવા, એક કપ ગોળ, 1 નાની ચમચી એલચી પાઉડર, 1 ચમચી ડ્રાઈ ફ્રૂટસ

વિધિ

* તલ -માવા અને ડ્રાઈ ફ્રૂટસ રોલ બનાવવા માટે સૌથી પહેલા તલને એક કડાહીમાં નાખી સોનેરી થતા સુધી શેકીને બારીક વાટી લો.

* માવાને શેકી લો.

* ગોળની એક તારની ચાશની બનાવો.

* કાજૂ, પિસ્તા, બદામ વગેરે ડ્રાઈફ્રૂટસ બારીક સમારી લો.

* હવે તલ, માવા અને એલચી પાઉડરને ગોળની ચાશનીમાં મિક્સ કરી લો.

* તૈયાર મિશ્રણને ચિકણાઈ લાગેલા નાના સંચા કે થાળીમાં નાખીને સમારેલા ડ્રાઈફ્રૂટસ ભરીને રોલનો આકાર આપો.

* ઠંડા થતા પર તમારી મનપસંદ આકારમાં કાપી લો અને તલ અને ગોળના આ પાવન પર્વનો આનંદ માણો.

મીઠી-નમકીન તલ પાપડી

સામગ્રી

સફેદ તલ પોણા કપ, 1 કપ લોટ, પોણા કપ મેંદો, પોણો કપ સોજી, અડધો કપ ગોળ(સમારેલા), 1/4 ચમચી જાયફળ પાઉડર, 1 ચપટી મીઠું, 1/4 નાની ચમચી એલચી પાઉડર, ઘી મોયણ અને તળવા માટે

વિધિ

* સૌપ્રથમ લોટ, સોજી, મેંદો, તલ, જાયફળ પાઉડર અને મીઠું મિકસ કરી લો.

* હવે એક પાણીમાં ગોળ ઓળગાવીને ગર્મ કરી લો. ગોળ પૂર્ણ રૂપ ઓળગી જતાં પન આ પાણીમાં એક મોટી ચમચી ઘી મિક્સ કરી સારી રીતે ફેંટી લો.

* હવે આ પાણીથી સખ્ત લોટ બાંધી લો. પછી બાંધેલા લોટની 2-3 મોટા લૂંઆ બનાવીને જાડી-જાડી રોટલી વળી લો.

* હવે તેને મનપસંદ આકારમાં શેપ આપી કાપી લો.

* એક કડાહીમાં ઘી ગરમ કરી ધીમા તાપ પર સોનેરી થતા સુધી તળી લો.

* હવે તૈયાર અને ખાવામાં સ્વાદિષ્ટ મીઠી-નમકીન તલ પાપડી તૈયાર છે.

ઉત્તરાયણ સ્પેશ્યલ - ડ્રાયફ્રુટ ચીકી

સામગ્રી: - ૧ કપ ખાંડ - ૧/૪ કપ કાજુ નો અધકચરો ભૂકો - ૧/૪ કપ અખરોટ નો અધકચરો ભૂકો - ૧/૪ કપ

બદામ નો અધકચરો ભૂકો - ૧/૪ કપ પીસ્તા નો અધકચરો ભૂકો - ૧/૪ ટી.સ્પૂન કેસર ના રેસા

બનાવવાની રીત: સૌપ્રથમ કાજુ,બદામ,અખરોટ અને પીસ્તા ને ઘી કે બટર મૂકી શેકી લેવા.અને પછી તેનો અધકચરો ભૂકો કરી સાઈડ પર રાખવો. હવે એક નોન સ્ટીક કઢાઈ માં ખાંડ લઇ ગરમ કરી તેની ચાસણી બનાવવી. પાયો થઇ જાય એટલે તેમાં કાજુ,બદામ,પીસ્તા,અખરોટ અને કેસર નાખી તરત જ ગેસ

બંધ કરી હલાવી લો. હવે તેને ગ્રીસ કરેલી થાળી કે આડણી પર મૂકી લુવો કરી વેલણથી વણી લો,થોડું ઠંડુ થાય એટલે તવેથા થી ઉખાડી કટરથી કપ કરી લો.

તલ-ખજૂરના લાડુ.

સામગ્રી - 250 ગ્રામ તલ સેકેલા અને અધકચરા વાટેલા, 500 ગ્રામ ખજૂર ધોઈને વાટેલી, 1 કપ મગજતરી, 1 કપ નારિયલ છીણેલુ, 1 ટી સ્પૂન ઈલાયચી પાવડર.

બનાવવાની રીત - ખજૂરન પેસ્ટમા તલ, નારિયળ, ઈલાયચી, મગજતરી આ બધાને સારી રીતે ભેળવી લો. હવે આના નાના-નાના લાડુ વાળી લો. આ લાડુ સ્વાદિષ્ટ, તરત બનનારા અને પૌષ્ટિક છે.

તલની પૂરણ પોળી

સામગ્રી - 250 ગ્રામ તલ, 125 ગ્રામ માવો,300 ગ્રામ ખાંડ(દળેલી), 500 ગ્રામ મેંદો, મોણ અને સેકવા માટે ઘી.

બનાવવાની રીત - તલને સાફ કરી સેંકી લો. માવો પણ ગુલાબી થતા સુધી સેકી લો. તલ માવ અને ખાંડ સારી રીતે મિક્સ કરી ભરવાનુ મિશ્રણ તૈયાર કરી લો. મેંદામાં ઘી નુ મોણ આપીને ગૂંથી લો. હવે તેના લૂઆ બનાવીને કચોરીની જેમ મિશ્રણને ભરો ને ચારે બાજુથી દબાવી દો, જેથી મિશ્રણ બહાર ન નીકળે. હવે તેને થોડી વણીને તવા પર બંને બાજુથી સારી રીતે સેકી લો. ઉપરથી ઘી લગાવીને સર્વ કરો. તમે ધારો તો તેને ઘી માં તળીને કે ઓવનમાં બેક કરીને પણ બનાવી શકો છો.
